Produced entirely from 100% Sauvignon Blanc, it is easily the one of the very best SB's we've ever carried, and that is saying something!
Wide temperature variance in the summer- hot days often near 100 degrees and cool nights, often in the 50's! This vineyard is not far from a creek, where the marine and alluvial soils are heavier which results in fleshier and more complex whites. We spared no expense in winemaking, starting with a skin maceration and following with new french oak and acacia barrel fermentation and maturing in those same barrels. It's a lot of work but the resulting wine is worth it.
The clarity is perfect, the pale golden color shimmers in the glass. As the nose opens up, you'll find it intense and tantalizing, with an emphasis on the yummy, racy fruit. I can find melon, apple, pear and also the tropical notes of guava, mango, and pineapple as it opens and develops in the glass. Those flavors continue on the palate, which has an incredible texture thanks to all of Camille's careful attention in the cellar working with the lees. It is a lot of precision and we can taste it. The finish is warm and fresh, the fruit lingers but also a bit of salinity and hints of butterscotch.
